A recipe for a unique and delicious dessert. Savoiardi are typical Piedmontese biscuits. They can absorb pastry creams in an exceptional way. This particular version of tiramisu with savoiardi biscuits combines the chocolate and the unique flavor of the pears.
INGREDIENTS for the Tiramisu with savoiardi pears and chocolate (for 4 people)
For the chocolate cream:
300 grams of mascarpone
2 fresh eggs
40 grams of chocolate
200 ml of black chocolate
240 grams of pears
2 teaspoons granulated sugar
2 tablespoons unsweetened cocoa

Cut the chocolate in to chips . In a bowl combine the mascarpone , eggs , sugar and beat until well blended. Add the chocolate chips and mix gently with movements from the bottom up .
Peel the pears and cut into cubes, cook them in a pan for 5 minutes with a little ' sugar and water and cool them well .
In a bowl, mix sugar and cocoa. Heat the milk without boiling , using a whisk , pour the mixture of cocoa and sugar and let it cool .
Place on the bottom of four bowls made from mascarpone cream , then pears , and finger biscuits soaked in milk with chocolate.
Sprinkle with cocoa powder and put back a layer of pears, then the savoiardi biscuits, and finally the cream.
Let stand in refrigerator several hours before serving and sprinkle with more cocoa.
