The Tagliolini pasta with truffles are one of the simplest recipes of Piedmont cuisine.

A simple and tasty way to appreciate our truffles. The tagliolini with truffles are prepared with few simple ingredients just to enhance the flavor of truffles. Truffle are mushrooms that grow in the soil of in Piedmont it is very rare and hard to find.

Pasta egg tagliolini 320 gr
Dolcepiemonte whole truffles 40 g
2 garlic gloves
5 tablespoons of extra virgin olive oil
Anchovies in oil No. 2
  Cut the truffles into thin slices or you can use our ready-made slices of truffle.

Cut the anchovies into small pieces .
In a pan pour the olive oil and sauté the garlic cloves .

When the oil is flavored remove the garlic and add the anchovies  in the oil and break them with the help of a fork to.
 Add slices of truffle and warm up slightly for a few seconds to enhance the flavor of the truffle .

Keep aside a few slices of truffle for the final seal .
Bring to boil a pot of salted water and cook the tagliolini pasta .
Drain the pasta , skip the tagliolini in truffle sauce and anchovies, add salt, pepper and  sprinkled with the remaining slices of truffle .
