Our truffles (tuber aestivum ) are great especially on hot dishes such as risotto , or on the classic Piedmontese pasta "tajarin" . In the same way as the fresh truffles these one can be cut into thin slices and used on fried eggs or why not on a nice plate of agnolotti .

Even the liquid, consisting of water and salt is great adds at the end of cooking in a risotto or used in pasta sauce .
